Yummy – cracker candy
Courtesy of intrepid reader Jo, I recently went on a quest to find out more about “cracker candy.”
This led me to another intrepid woman in my life, my mother, who normally can turn up any recipe but who wasn’t familiar with this treat. So, moving along the list, I hit up correspondent and friend Barb Krebs, who provided an AWESOME recipe for me.
Cracker Candy
35 to 40 saltine crackers
1 16 oz. package of chocolate chips
1 cup butter or margarine
1 cup brown sugar
1 cup chopped walnuts (optional)
Line a greased 9- by 13-inch cookie sheet with crackers, one layer thick only. Melt butter in sauce pan. Add brown sugar and stir until sugar is melted, blended, and bubbly. Pour over crackers. (Crackers will float) Place in preheated 350-degree oven for 10 minutes. Remove. Add chocolate chips to top, spread until melted evenly over crackers. Add nuts if desired. Bake again for 15 minutes. Remove and cool. Cut into squares and ENJOY!
Now, I ran that past Jo, and she said that it was pretty much what she was talking about. Her response:
“It is an awesome candy to eat and if you like Heath bars this is very similar but waaaay more. I crunched one piece and put over ice cream – eat your heart out Bryers, et al!”
And, of course, there’s always a down-side. Jo says her recipe called for a half-cup of melted butter, and looking at the Giant butter box, she came out to 264 grams of fat and more than 2,400 calories in a batch. Holy cow!!!
But it sounds soooo good… anyone ever make it? I’m honestly afraid to – because I’d eat the whole thing!
