Recipe requests revisited: Ham balls, etc.
Commenter Doris McDowell had been looking for a ham ball recipe and also a chocolate crunch cake recipe. “Are there any available?,” she wrote.
Jo provided a real “Only in York County” moment – even though it was technically out of York County. She writes:
“This just too much of a coincidence. When in Juniata County (recently) I stopped to pick up a new cookbook published by the Margaret McCann Dance School in Mifflintown. A cousin was involved in putting the cookbook together and requested recipes of my family from me last year. Since I arranged for her to get some she gave me a copy. As I was leaving her home, she said to be sure and try her HAM BALLS! I’ve never eaten ham balls but here’s her recipe.”
2 1/2 lbs. equal parts of ground ham and pork
1 1/2 cups breadcrumbs
3/4 cup milk
2 eggs
Mix together, season with salt & pepper. Roll into 3/4-inch balls. Bake on cookie sheet lined with parchment paper at 300 degrees F for 30 to 45 minutes, turning once during baking.
Sauce:
1 can pineapple tidbits or chunks
1/4 cup brown sugar
2 Tbsp. cornstarch
1 chicken bouillon cube
3 Tbsp. vinegar
1 Tbsp. soy sauce
Drain pineapple juice and add enough water (if necessary) to make 3/4 cup liquid. Mix brown sugar, cornstarch and bouillon in a small pan. Stir in pineapple juice/water mixture, vinegar and soy sauce. Cook, stirring constantly, until it thickens and comes to a boil. Simmer on low heat for three minutes. Add pineapple chunks and pour over ham balls.”
Never one to be outdone (um…), my husband chimed in with his suggestions:
Hubby’s Ham Balls
1. Cook ham
2. Roll into balls
3. Serve
Hubby’s Chocolate Crunch Cake
1. Make chocolate cake
2. Bake until crunchy
3. Serve
You can guess I don’t let HIM cook very often, can’t you! Seriously, though, thanks to Jo for helping out on this. And we do still need a Chocolate Crunch Cake recipe, so feel free to chime in if you know of one!
