A reader recipe: Corn pudding
Many thanks to friend and reader Lorie, who shared this recipe for corn pudding with me back when we were talking about holiday meals. It sounded so good – and so like something a lot of Yorkers would love – that I just had to ask if I could share it!
Lorie’s Corn Pudding
4 c. corn
2 eggs
1 tsp. salt
1/8 tsp. pepper
1 Tbsp. sugar
2 Tbsp. butter (melted)
1 Tbsp. Flour
1 c. milk
To the corn, add salt, sugar, pepper, flour and melted butter. Then add the beaten eggs and milk. Pour into greased baking dish. Bake at 350 degrees for 1 to 1 1/2 hours.
Wow, simple enough that I could make it! And that’s saying something. I know I plan to make this for my daughter, who loves corn! Do you guys have any other good corn recipes? (Besides, of course, chicken-corn soup!)
